Cauliflower Rice Recipes: Cheesy Garlic and Herb Cauliflower

Ok, folks. I just need to tell you. This is probably one of the yummiest and easiest cauliflower rice recipes I have ever had. Like ever. I think you should try it. *wink*

Who knew cauliflower rice recipes could be so easy?

Start by ricing your cauliflower. Much less difficult than it sounds. I wash mine, chop it into pieces, and put it through the food processor. Don’t over process it. I usually pulse until the cauliflower is the size and consistency of rice.

Next, put it straight into a microwave or oven safe dish depending on which way you plan to heat it.

Add your butter, seasonings, and cheese. Heat, stir, repeat until the cheese is all melted.

Enjoy!

Ingredients

 

  • 1 head cauliflower (I used half of a large one, and it was plenty for my family.)
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 2 tsp dried parsley
  • 1 tsp  dried basil
  • salt and pepper to taste
  • 6 oz cheese of your choice (I used my favorite fiesta blend.)

Directions

 

  1. Wash and roughly chop cauliflower.
  2. Place cauliflower in the food processor in small amounts depending on the size of your food processor. (I have this one, and it has changed the way I cook! I can’t recommend it enough!)

  3. Place cauliflower in microwave or oven safe dish. Add butter, herbs, and spices.
  4. If using the microwave, heat on full power for 2 minutes at a time, taking out and stirring until the cheese is fully melted and stirs easily. If using the oven, heat to 350* and keep watch for the cheese to melt. I’d pull it out and stir it after 5 minutes and keep checking it every 2 minutes after that.

So simple! So quick! So yummy! This is one of those cauliflower rice recipes that I’ll be making regularly.
